Wet Mix
- 1 C Sugar
- 1/2 C Butter
- 2 Eggs
- 1/2 C Hot Water
- 2 Heaping TBS Cocoa Powder
- 1/2 C Cold Water
- 1 tsp Vanilla Extract
Dry Mix
- 1 1/2 C Flour
- 1 tsp Baking Soda
- 1 tsp Baking Power
- Pinch of Salt
Icing
- 1 1/2 C Icing Sugar
- 2-3 TBS Cocoa Powder
- Rounded TBS Butter/Margarine
- 1-2 TBS Milk
Directions
- With beaters, cream sugar and butter together.
- Separate eggs from yolks. Add yolks to wet mix.
- Beat whites separately with a pinch of salt and set aside.
- Dissolve cocoa in hot water, add to wet mix, then add cold water and vanilla.
- Mix dry ingredients. Add to wet mix and beat then fold in egg whites.
- Bake at 350 F for 30 min.
- To make icing: mix cocoa and icing sugar. Cut butter into mix, add milk and blend til smooth. Allow cake to cool before icing.
