Ingredients
- 2-3 Handfuls Tortilla Chips
- 1-2 C Shredded Marble Cheddar Cheese*
- 1/4 C Black Beans
- 1/4 C Corn
- 1/4+ C Salsa
- White Part of 3 Green Onions
- Taco Seasoning Packet
- Toppings:
- Green Part of 3 Green Onions
- Fresh Cilantro (Optional)
- Sour Cream*
*This recipe can easily be adapted for vegans with plant based cheese and sour cream substitutes. I like to put my sour cream in a squirt bottle for added effect.
Directions
- Drain and rinse black beans well. Place in bowl with corn, white part of green onion and salsa. Sprinkle a small amount of the taco seasoning (about 1/2-1 tsp) over top and mix well.
- Preheat oven to 400 F. Line a baking sheet with parchment paper and spread nachos out evenly across it.
- Scatter the black bean mix over the nachos by the spoonful.
- Sprinkle cheese over top and bake until cheese has melted.
- Garnish with toppings and enjoy!
