BLACK BEAN NACHOS

Ingredients

  • 2-3 Handfuls Tortilla Chips
  • 1-2 C Shredded Marble Cheddar Cheese*
  • 1/4 C Black Beans
  • 1/4 C Corn
  • 1/4+ C Salsa
  • White Part of 3 Green Onions
  • Taco Seasoning Packet
  • Toppings:
    • Green Part of 3 Green Onions
    • Fresh Cilantro (Optional)
    • Sour Cream*
*This recipe can easily be adapted for vegans with plant based cheese and sour cream substitutes. I like to put my sour cream in a squirt bottle for added effect.

Directions

  1. Drain and rinse black beans well. Place in bowl with corn, white part of green onion and salsa. Sprinkle a small amount of the taco seasoning (about 1/2-1 tsp) over top and mix well.
  2. Preheat oven to 400 F. Line a baking sheet with parchment paper and spread nachos out evenly across it.
  1. Scatter the black bean mix over the nachos by the spoonful.
  2. Sprinkle cheese over top and bake until cheese has melted.
  3. Garnish with toppings and enjoy!
