PB AVOCADO SANDWICH

Ingredients

  • 1 Avocado
  • 2-4 Slices Bread
  • 2-4 TBS Peanut Butter
  • Topping ideas*
    • Cucumber Slices
    • White or Green Onion Slices
    • Shredded Carrot
    • Tomato Slices
    • Lettuce/Kale
*I like to think of this sandwich as the savoury version of PB and Banana. It's great without any toppings but I like to load it up with veggies if I have them.

Directions

  1. Cut avocado in half, remove pit then quarter. Gently peel skin off and slice into long crescent-like strips. You can easily make two sandwiches with half an avocado in each or you can slice it thicker and make it into just one sandwich.
  1. Lightly toast bread (if desired), spread peanut butter on each slice and sandwich the avocado between the slices with any toppings you desire.
