*I like to think of this sandwich as the savoury version of PB and Banana. It's great without any toppings but I like to load it up with veggies if I have them.
Directions
- Cut avocado in half, remove pit then quarter. Gently peel skin off and slice into long crescent-like strips. You can easily make two sandwiches with half an avocado in each or you can slice it thicker and make it into just one sandwich.
- Lightly toast bread (if desired), spread peanut butter on each slice and sandwich the avocado between the slices with any toppings you desire.
