CHIC PEA SALAD

Ingredients

  • 2 C Chic Peas
  • 1/2 C Celery, Finely Chopped
  • 1/3 C White/Green Onion, Finely Chopped
  • 1/4 C Fresh Parsley/Cilantro, Chopped
  • 4-6 TBSP Mayo*
  • 3-4 TBSP Lemon Juice
  • 1/4 tsp Paprika
  • Salt and Pepper
  • Optional:
    • Nori Seaweed Sheet(s)*
*This recipe can easily be made vegan using a vegan mayo--even name brands have vegan options now. If you want to make this recipe taste like tuna salad, crumble a sheet or two of seaweed snack into the mix.

Directions

  1. Drain and rinse chic peas. Mash and mix with all ingredients, adding as much mayo and lemon juice as you prefer--season to your taste.
  2. Assemble as a sandwich with your favourite toppings or make into a tunaless melt on half a bun topped with the mix and cheese (broil in oven til cheese melts)
Note: try the savory cousin to the popular "Ants On A Log" recipe I call "Fire Ants On A Log" (click for recipe) with this salad mix. Or, cook some rotini (or your favourite noodle) and add the mix to it with some sundried tomatoes for a quick and easy pasta salad.
