LASAGNA

Ingredients

*Click on pasta sauce to see Mama's pasta sauce recipe. I recommend mozzarella but use whatever cheese you prefer. If you find a vegan mozzarella you like and noodles without egg, you can make this vegan that way or just use strips of zucchini instead of noodles.

Directions

  1. Cook lasagna noodles according to package directions but try to keep them on the el dente side so they hold together better when assembling. You may want to cook more than you think you need in case some of them break.
  2. Evenly spread a small amount of sauce across in the bottom of a large baking dish, about 1/2 C.
  3. Carefully place a layer of cooked noodles flat across pan lengthwise. If using, sprinkle parmesan/vegan parm/almond meal lightly across noodles. Evenly spread another, thicker layer of sauce over top, about 1 1/2 C. Evenly spread a layer of cheese over sauce, about 1 1/2 C.
  1. Repeat step 3 for 3-4 layers, depending on how deep your pan is. Be sure to keep the same order: first the layer of noodles, then a sprinkle of parm/almond meal, then the sauce, then the cheese. End off on a layer of cheese.
  2. Cover with foil and bake in oven at 400 F for 1 hour, removing foil in last 15 min until bubbly and cheese is slightly carmelized.
  3. Let stand 10-15 min before serving. Serve with a baguette or garlic bread.
    Note: this recipe is great for meal prepping! Cut into desired servings, wrap tightly and freeze.
